Gluten Free Sourdough Bread Recipe

This is such a nice loaf of crusty bread. Be sure to use a good flour mix in here.

It makes a wonderful breakfast slathered in butter or dipped in soup. Slice and freeze it then toast before slathering it and enjoy! Its dleicious and pretty simple to make, just start it ahead of time. 

This was the first reipe I ever developed. The original recipe didn't have psyllium husk in it but after making it a few times its better with it in.

  • ½ Cup Sourdough Starter 
  • 3 tbs psyllium husk
  • 3 Tablespoons + 2 teaspoons spring water
  • 1 Egg
  • 1 ⅛ Cups measure-for-measure gluten-free flour blend (which includes xanthan gum already)
  • ½ Tablespoon sugar
  • ¼ Tablespoon salt
  • 1 Tablespoon + 1 teaspoon oil 

Directions:

  1. Whisk together the starter, water, psyllium and egg.
  2. In a separate bowl, combine dry ingredients well.
  3. Stir oil into the dry ingredients and mix until combined.
  4. Pour the wet ingredients into the flour and oil mixture, stirring briskly until well-blended. Form into a ball. It will be pretty wet and sticky but will hold its shape.
  5. Cover the bowl with a cloth and let rest in a warm area for 6 – 8 hours.
  6. Line a baking sheet with parchment paper. Dust the parchment paper lightly with gluten-free flour.
  7. Gently move your ball of dough (less wet now, but still sticky, so lightly dust your hands/spatula with gluten-free flour to minimize sticking) to your parchment paper-lined baking sheet.
  8. Preheat your oven and a dutch oven (or oven-safe dish and lid) to 500 degrees. If you don’t have a lid, use foil.
  9. Gently slash the top of your bread with a sharp knife. Lift it by the edges of the parchment paper and set the parchment paper and dough ball into the dutch oven. Cover and bake for 15 minutes.
  10. Reduce oven temperature to 450, uncover, and bake for 20 more minutes until the crust is golden brown with peaks a little darker, the crevice from the slash a little lighter.
  11. Remove from the oven, lift by the parchment paper out of the dutch oven and onto a cooling rack. Remove and discard the parchment paper.
  12. Let the bread cool completely before slicing.

Soft Buttery Buns/Dinner Roll Recipe

I'm normally gluten and dairy free due to previously testing sensitive to those foods. It's been years since I enjoyed a nice dinner roll or a soft buttery bun. Currently I'm on a reintroduction phase to see what I can slowly reintroduce back into my diet and record how and what I feel. That way I can see if I can enjoy those foods occasionally. 

Well, I had to start with something I have been craving for some time. A nice bun I can have with dinner or in the morning. Well here is the recipe I came up with. Its everything you want in a bun or roll. Enjoy!

I used all organic ingredients because I want to ensure I only eat the best quality wheat and to steer clear of any chemicals. I also used lactose-free butter so I can enjoy them as much as I want.

Ingredients

  • 1 1/2 cups whole milk, warmed to 110F
  • 5 Tbsp unsalted butter, melted
  • 1 Tbsp active dry yeast
  • 1/3 cup organic granulated sugar
  • 1 1/4 tsp sea salt
  • 4 cups all-purpose organic flour, minus 1 Tbsp
  • 1 Tbsp unsalted butter, melted to brush the tops of dinner rolls
  • 1/2 tsp sea salt, to sprinkle finished rolls

Instructions
  1. In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit for 1 minute. Whisk together and let it sit for about 5 minutes until the yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar, and salt.
  2. Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula).

  3. Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry fingertips.
  4. Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place the dough in an oiled bowl. Cover it with plastic wrap and let it rise for about 2 hours in a warm place or until doubled in size. 
  5. Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9×13 casserole dish or baking sheet.

  6. Cover the dinner rolls with plastic wrap and let them rise for another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown
  7. Immediately brush the tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

Glute Free Sourdough Starter Recipe For Beginners

Sourdough Starter is used in place of yeast in breads and pastries to achieve the rise and add a a nice texture to your breads. Sourdough is knows to be easier on your digestion as it uses wild yeast instead of added yeast which can contribute to health and digestion upset in some. Many families today are switching to sourdough bread like our forefathers did before in advent of man made yeast. 

Taste: sourdough has a slight sour taste, depending on how fermented tour starter is before you use it it can be a strong or gentle flavor. I like a nice light sour taste, not too strong. 

How to make it 

Can't make it? BUY IT HERE 

RECIPE 

1 tbs water and 2 TBS  rice or buckwheat flour. Add another TBS water if it's too dry.

Add to a jar mix well, lightly cover jar with lid or coffee filter.

Wait 24 hours and 'feed' again with 1 TBS water and 1 TBS flour.

Feed every day for 3 days. Once it's bubbly and sour discard 2 tbs of starter and feed with 1 TBS  water and 1 TBS flour, wait 12 hours feed again. 

Next day, feed and wait until it's nice and bubbly. 

It's now ready to use.

Starter Tips* 

Use a wooden soon to mix.

Double feed twice or 3 times a day if it's not active after 3 days. 

Once bubbly It's ready to use in your bread recipe.

  • Raw cane sugar (cleanses and exfoliates the skin)
  • Jojoba oil and watercress extract (nourishes the skin)

If the thought of stepping away from social media and texting fills you with anxiety, try doing it for just an hour a day. You can build up to two hours or go a full weekend only using your phone for emergencies. 

DO A SPECIFIC CLEANSE

DRY-BRUSH YOUR SKIN

Cruelty-free products, while not tested on animals, cruel-free products may still contain animal ingredients or by-products that would have necessitated animals.

Measure while, though don’t contain any animal ingredients, vegan products may still be tested on animals and still legally claim to be “vegan”.

When a product claims to be both ‘cruelty-free and vegan’, it means it was not tested on animals and does not contain animal products or ingredients.

Growing Organic Food on A Small Farm

My Channel For Organic Gardening and Homesteading

So I love creating skincare products and wellness products too but I don't think I have ever told you guys about my love for the other half of my lifestyle. Farm life! Yes, I live on a small homestead and it's the place I love to be. I love the quiet escape my farm provides for visiting family and friends. They come to my home for a tranquil getaway from the hustle and bustle of their day-to-day grind. My home is perfect for my family. It's only one acre but that's great for us.

We have lived in the countryside for over nine years and counting. But just last year, when the world seemed to end haha, we decided to purchase our home. We packed and moved in the middle of the pandemic! Let's just say, it was messy. But we were so proud and happy.

We managed to pull it through and closed on the property on June 30th, 2020! 

We are so happy and proud that we could finally own our first home and output our roots down.

So speaking of roots that's where my fruit trees come in. We had to dig out our 8-year-old fruit trees, it was a long painful process and some were damaged during the transport into our small trailer. 

So we started a YouTube channel to showcase our homestead and all the work we put into the property in the last 9 months. We are doing this on our own, with no help from family or other sources. It's my husband and I take on the world. Our son is why we care and continue to work so hard. It's all for the kids, after all. 

Okay, so the trees made it here and we planted them in the ground as soon as we moved in, but I'm sad to say that it looks like some will not make it😔 But I'm still hoping out hope that they will all bear fruit again. 

We ordered more fruit trees but they're not as mature and we will have to wait for fruit for the next couple of years. The one fruit I'm the most excited to try is the PawPaw fruit. Please google the PawPaw, it's a 'tropical' fruit that is only native to Southern Ontario and Eastern USA. Omg, tropical fruit in Canada! So we bought and planted three trees and we will update you on their growth. Watch me plant a fruit orchard here.
